Well I drained 2 kegs finally, and well those sad sad days are no more. I figure it allows me to brew and plan more.

After success with my last few beers, and really enjoying Jeff's Impressor. I've decided to jump into it head on.

I'm on my phone so here is a pic. Based on whats in my head I figure 110-120 ibu, and 9% abv.

I plugged in the numbers, 111.6 IBU, 9.55% ABV, 8.75 SRM.

It looks good and I love Double IPA's. I like that you have some dextrose in there to dry it out. You are close to 10% of the grain bill but I recently started factoring that in with Beersmith so a little more wouldn't hurt. As you know mash 148-152F 60 mins. Depending on you water profile I'd add some gypsum and calcium chloride. I like to save propane and would do a 60 min boil with that grain bill with a FWH and maybe up the Warrior to 2 oz. I love to hammer it was hops at 30 mins 20mins 10mins 5 mins and flameout. You are making a big beer so I'd even up the dry hop to 4-5 oz if you wanted. A few of the hops you mentioned I haven't brewed with but think your onto something.

I was contemplating a 5 and 10 minute addition, and moving the calypso into the mash as I only have an ounce left. Plus it's leaf.

I was toying with the idea of 2 oz bur figure it would be to strong and drive the fwh bittering ibu's to approx 115.

Calypso in the mash could be nice. I'd be tempted to dry hop with it. I really like hop bursting and the results it has in the beer. Looks like you do too with all the hops from 15 mins in.

Yeah. Love big hop flavor in my beers. I'm going to tear open the freezer today and weigh out the remaining belma and calypso.

Recipe modified.
1oz each Belma, Centennial, and Galena @ 15, 10, and 5
Calypso (only. 5 ounce) moved to mash.

Upped each dry hop by .5 an ounce.

Upped 2 row and pale malt 1/2 lb.

19.5 oz hops, 18lbs grain.

Curious how this will turn out. Let us know how the hop combo's work. On another note Keith how do you find using the Galena hops? I have a bunch from the group buy but haven't used them yet. I see they are a sub for Chinook so I think they will be great. Any tips for using them?

Honestly I brewed a smash using pilsen and it turned out great, great flavor with a clean finish. Personally I think they would pair with any of the citrus hops.

As for the gypsum and calcium chloride, I've never adjusted my water yet. Any recommendations? I'm on municipal water in sackville.

And last. Due to almost 20oz of hops, how much extra water should I add so I still fill a keg? I was thinking 5 liters?

Good to hear about the Galena. I have 2 lbs so I'll put them to good use. I'm on a well and with my water profile I use 2.5 tsp Gypsum and 1 tsp calcium chloride for a 6 gallon batch. I plug in my numbers to Brewers friend and try and match for the style of beer I am brewing. I'd see if one of the Sack Vegas guys can help you with a water profile if you don't have one. Keep additions small and work up. I have never added 20 oz of hops to a single batch and haven't factored in liquid absorbed by hops before.

So Attached is my current build on this DIPA. I'm tempted to add more hops at 5 and 0 mins.

Also with this big a beer. I'm not sure how to adjust my water accordingly. Below is my profile from the water thread. Any idea on the quantity of Gypsum and Calcium Chloride I should add?

Biggest thing would probably be to add some gypsum to get the sulfate and calcium up- likely somewhere in the 10g range for a 5 gallon batch.

Everyone is going to have a different approach with water chemistry, and there is no correct answer. It depends how you like the taste of your beer.

Your chloride is low as well as the sulphate and I'm a believer in the balance thing with those two.

For me, I’d like that beer with 4g gypsum, 7g calcium chloride and 3g Epsom salt.

Jeff's Impressor was great, and made me want to create my own monster! Besides, those 6% beers don't do this.

Actually I think 2g gypsum, 4g calcium chloride and 3g Epsom salts would be better now.

Feel free anyone to modify the spreadsheet to how they would do it. Would be interesting to see.

You could also bring down the PH with 8oz or so of acid malt. There's a spot to enter that on the sheet.

nah I'm in no rush, won't be brewing this for about a 3 weeks when I go back on vacation but appreciate the offer. May try the acid malt as an alternative.

Wondering about this myself... is this stuff safe to use for beer?

I bought a bag from SS. Read the list of additives. You don't want scents.
