Needed: Hoppy Red recipe ideas
Hey guys,
Subject says it all, Jamie and I are looking for some good / proven red ale recipes. We can make em hoppy as needed. Always tricky to find a good balance with reds that aren't too malty/sweet. Lets have em.
Cheers

It's one beer I don't even play with. Go try Jamie's stone levitation close. I've brewed this a few times.

Do you want something along the classic style red, just with more hops, or a bigger more bitter beer altogether?
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

I brewed a clone of Maine Beer Co.'s Zoe last year that turned out great.
I also currently am just about to have a clone of Modern Times Blazing World on tap... lots of Simcoe, Mosaic and Nelson. Smelling great so far!

I'm thinking more a traditional red, lighter body, more balanced than bitter. This rules out the clone suggestions (which sound good, just too big!).
We'll add some late hops for aroma/flavor. More trying to get a reasonably balanced base grain bill + IBU combo.

Zoe is probably my favourite commercially made IRA, a really great beer!berley wrote:I brewed a clone of Maine Beer Co.'s Zoe last year that turned out great.

Tim, the BCS book has a West Coast Blaster recipe. I've made it several times in the past and it's always turned out great. I can also share my Red Coat IRA recipe with you as well.
