Last Summer I stopped into Cheval Blanc in Montreal and had a pint of "Morning Wood". To be honest, only ordered it because the name was hilarious (not normally a huge fan of brown ales). This beer was all Simcoe and very tasty. I FB messaged the pub looking for hints from the brewer as to how to make it and they actually sent the recipe. Here it is (the messages I exchanged were in French so this may not be fully properly translated):
Grain bill:
7.8% munich 2 wyermann, 1.7% carafa 3, 7.8% brown malt, 4,7% amber malt, 78% pale malt
Hops:
Based on 1000L so adjust based on your batch:
1.5kg Simcoe at 90 min, 3kg for whirpool, 3.2kg to dry hop at 15C for 5 days
He also mentioned you could replace by the Simcoe by Zythos or a blend of 90% Chinook 10% mosaic
Mash:
I'm a BIAB guy, but here's what I think he said: fast mash at 67C, 20 min mash / 30 min recirculation with original density at 16.7
Yeast:
He mentioned used a high attenuation yeast (brown malt give off a lot of dextrine) - either a dry english or San Diego super yeast. Final gravity should be around 4.5

The brewer asked if someone makes this and they head to Montreal to bring a sample. If you do make it to Cheval Blanc definitely don't miss St-Bock which is a few blocks away (L'amere a boire is a 2 min walk from sb but not nearly as good). Definitely planning on doing this one at some point.
