OG 1.060
FG 1.003
ABV 7.5%
3.25 kg German Pilsner malt (52%)
2.50 kg Vienna malt (40%)
0.50 kg Flaked Barley (8%)
Mash schedule: Single infusion, light body
148F for 1 hour
15 g Magnum (14% AA) @ 60 min
20 g Centennial (9.5% AA) @ 20 min
30 g Centennial (9.5% AA) @ 10 min
60 g Centennial (9.5% AA) @ 1 min
60 g Centennial dry hop
2nd generation 3711 French Saison yeast

If love to do a side by side tasting of your Saison and mine. Thankfully I have lots left in tap! Looking forward to it.
Very interested in how 3711 deals with hops vs. the Wallonian strain.

Not just IBUs but how much hops were added. Late additions don't add much bitterness but loads of flavour.Somewhat reasonable IBUs if the calculations are anywhere accurate. The idea I went with is hopped heavily with North American hops (pretty much Centennial) but the grain bill and yeast selection being close to a siason style yeast but with a stronger
'IPA level' alcohol percent than traditional saisons.

Derek was over and figure I'd share this with him. This works great. Loving this beer, definitely need to brew this for next years advent peter! This has set the bar.
Farmhouse & Hops work amazing together.

So That's what a
saison tastes like! I like it. Nice bitterness too, my lupulin shift just shifted a bit more, it was starting to slip back. Very nice, is there a slight musty taste at the end? I don't know the style or the hops.

Tasty beer Pete, I love me some centennial hops. What's making this bad boy so dark? I made a 100% Vienna beer that wasn't this dark? Just curious that's all. I'll shut up and keep drinking now

Brian, I was also thinking this is pretty dark for that much Vienna.

Well, a hopped up and high alcohol version of saison. You should get your lips on a Dupont Saison for a better understanding of the style, though it is rather open to a wide variety of malt, adjunct and hop options.

Really enjoyed this. Could have sworn that I got ginger on the first sip or two, but recipe says no and my taste buds smartened up further into the glass. Great hop aromas and flavors, but the belgian (french) character from the yeast started to shine as I let it warm up.

A very tasty beer, I don't recall having anything quite like this one. I love the hopped up Centennial shot to the senses but it has the farmhouse tarty nonsense going on, very interesting and enjoyable.

Mine had good hop flavour, but had very low carbonation and some strange cloyingly sweet aftertaste. I think my bottle was probably off

Ah, that sucks your bottle was off Jon (gm-). I usually am careful to double check bottles for proper capping.
Really don't know why the colour of the beer is this dark. Flaked Barley shouldn't be adding much colour, less than the Vienna or the Pilsner according to BeerSmith.
