Ginger Witbier

This is probably more of a weizen than a witbier but I called it a wit because of the added coriander and orange peel. :?

4kg 2-row (I used 1.5kg 2-row plus 3.5kg of homemade malt)
2kg wheat malt
40g Saaz 3.3% 60 mins
10g Saaz 3.3% 10 mins
15g coriander seed (crushed) 10 mins
40g fresh grated orange peel 10 mins
40g fresh grated ginger root 10 mins
1pkg Munich dry yeast

mash @ 152F 75 mins

SG 1.056
FG 1.010 (approx 6.1%)
batch size 20l
Next time I would likely cut back on the 2-row a bit to lower the alc to 5.0-5.5%. I was guessing at the extract potential of the homemade malt. Also might try the brewers dried orange peel next time (not much orange came through).

A pretty good beer and I'd make it again.
