My go to recipe:
5 gal of grocery store cider
1/4 tsp tannins
plenty of yeast nutrients
S-04 English ale yeast
Clear with bentonite after 2 weeks in primary
Keg, serve

Depends on the cider but usually in the 1.045-1.055 for O.G. Final is usually around 1.010 if you add enough nutrients. Very easy to back sweeten it with some frozen apple concentrate in the keg.
