Blue Moon Clone

So i've decided to get into the brewing game but want to start with one gallon batches until i have some more experience under my belt. I also want to try and make a beer my wife likes so she can agree that getting into 5 gallon batches make sense.
here is the recipe i found :

Batch Size (Gallons): 5.5
Original Gravity: 1.046
Final Gravity: 1.011
IBU: 14
Boiling Time (Minutes): 60
Primary Fermentation (# of Days & Temp): 14

1 Pkgs Belgian Wit Ale (White Labs #WLP400) Yeast-Wheat

Mash Grain Weight: 10.00 lb
Sparge Temperature: 168.0 F
Sparge Water: 3.79 gal

im i safe to say that i divide the ingredients by 5 for a one (1.1) Gallon batch??

My question would be how much water to use for Mash and how much for sparge?
i tried playing around in Beersmith but i don't see where i can scale down a recipe to a one gallon....any help would be greatly appreciated.

Yes divide by 5. I would just pitch a small pack of dry yeast though - you may be overpitching with a whole smack pack. SInce it is a small batch and your first all grain I suggest simplifying the recipe. I would batch sparge - add all your liquor to the kettle at 122 for 30 minutes then raise temp to 154 for 30 minutes. Then drain the wort and follow the hop schedule. You will get close to the same result without the extra bother. If you batch sparge increase your grain bill about 8% to account for reduced efficiency.

I'm also brewing up a wit...different recipe...great summer beer.

10gal batch

10lb 2row
10lb wheat malt
2lb crystal 15
1lb cara-pils
Mash @ 156f
90min boil
3.00oz Hallertau @ 60.0 min
4 Tablespoons of corn starch (mix into a slurry) @ 15min.
6.00 oz Orange Peel, Bitter (10.0 mins)
1.00 oz Coriander Seed (10.0 mins)

I used S04...I didn't want the esters that 06 give off for this brew
