Been a while since I've brewed a DIPA and figure it's time to get on it. I feel good about the below. Just wondering everyone's thoughts. This is also a 20 gallon batch. Volume is so high to compensate for the loss to hops. BTW this is also my advent entry :) :rockin:

You can get rid of the melanoidin and a lot of that crystal by using about 50% Munich 11 which is melanoidin rich. I think that will make a nicer beer. I tried using melanoidin before but prefer lots of munich. Have you had luck with melanoidin malt? Why use Canadian 2-row when you can get Marris Otter for close to the same price. Don't compromise on ingredients especially if you are only saving a tiny amount of money. I don't like Vienna much. I think it is ok in its place though. Don’t dry hop more than 3 days …4 days at the most.

I actually use Superior Pale malt now. Really enjoy using crystal 30 and melanoidin malt. Feel I know the flavor profile well enough to get my desired results. Plus Munich, melanoidin and crystal have different characteristics, not sure I could replicate using Munich alone. Big reason in posting was due to using 2 lbs of a 16.2% AA hop in late/ dry hops. Normally all my late additions are under 10%AA.

I don't think high AA is a problem for late additions. I've used a lot of Galaxy that way many times and done well with that, and that's around the same AA as Topaz.

How do you BIAB 64 lbs of grain? I assume you have to use a pulley system. There is no way you could do that on your own. Maybe you are weight lifter?

Profile I select in beersmith was biab due to no sparge. Just easier this way.

Done a ton of it. It's easy and cleanup is a breeze. In this setup however I have a bazooka screen.

Had this tonight. Possibly not a good idea to have it right after the 10% saison, but whatever I can do to avoid shovelling the driveway...

My bottle was pretty flat for starters, so I may not be tasting it as intended. I find it a touch dry for an IIPA and would prefer a little more malt sweetness. That said, it's got a wicked aroma, the alcohol level (which I'm assuming is at least 7.5%) is well-masked, I think the bitterness is right around where it should be and there are definitely some interesting hop flavors. I'm not sure Topaz is my favorite hop, but I think I have a pretty good idea of what it's like now. Thanks for the brew!!

Beer finished around 7.8%. Carbonation issue might be seen on a few bottles. Filled from the keg warm and had some foaming issues on the first few bottles. As for the dryness I always mash low on my hoppy beers. I prefer a dry hop forward beer, with a low malt presence. Just my personal preference.

Hazy, golden amber. Tropical fruit and grass on the nose. Good malt build. I'm feeling the Topaz hops gives off too much grassiness for my threshold (low for that flavour). Good beer but I am not I love with the Topaz hop variety.

My bottle was also very weakly carbonated. Having said that, the flavours were excellent. The glass magically drained itself quite quickly. :)

I drank mine a few weeks ago, since I was impatient and wanted to get to it before the hops faded. I don't remember the carbonation being too low.

I like how it was dried out, and hop forward. I'm generally not a huge fan of double IPAs because they so often have more malt sweetness than I like (Propeller, Garrison, St Ambroise). I thought the balance was more in line with Unfiltered, Bad Apple, and Rubbertoe's DIPA from last year.

first time trying the Topaz and honestly not a fan. Carbonation was just right. Might take a few goes at it to get a taste for the Topaz. Liked the balance and dryness and would have tried a second.

I'm in the mood for an IIPA so I skipped a few as I'm still behind. Great aroma pouring into the glass. I like my IIPA's dry and this doesn't disappoint. Carbonation is good with a nice head. This bitterness is nice and this glass is going quite fast. Thanks!
