I should probably also point out that I started with RO water and built it up according to the Bru'n Water "brown malty" profile.

Love the cap!!

Another style I don't know very well. Alcohol isn't hidden; definitely feel the 8%. I like some of the dark fruit flavors but I feel it's a little undercarbed. An interesting beer to finish the month on. Thanks!!

Forgot to post to this on NYE :spilly: Nice malt flavors, alcohol was present, maybe a bit undercarbed but I'm not sure if that's to style or not. :cheers3:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Way under-carbed and while the alcohol percentage is within style, you shouldn't really notice it. Took away from the maltiness. I found it to be similar in consistency with a liqueur, really.

I know how I messed up the carbonation, but I don't know why the alcohol is so present. I built up a starter in 3 stages and then fermented the beer at about 6C. Maybe I hosed the starter somehow.

I'm just drinking this now, and I'm liking it. Big malty munich flavours, plus I'm getting some light chocolate and licorice too.

Having this one now. Big malty beer! Alcohol comes through a bit but nice complex flavours. Very clean. Good job.

Beautiful clear reddish brown with a rich malty aroma. Lots of great malt flavours, rich, caramel, and alcohol, and a present but low hop flavour. The bitterness is a bit low. It has full body and finishes sweet but not cloying. I've been thinking of making a doppelbock like this. Very nice, thanks!

I had 8 of these left over from the exchange and they've been sitting in my basement at about 16C since then. I chilled one down and cracked it today. It's really mellowed out - very smooth. Carbonation is mostly good now. Alcohol is still present, but less so. I am thoroughly enjoying this. Could definitely drink a couple. Time has really made a big difference.

Cracked another one of these today. What a difference a year has made. Perfectly carbed now, very smooth, booziness is well hidden, great colour, super clear. I wish I had enough to share with everyone.
