2015 Advent December 2 - Dead of Winter Black IPA

Dead of Winter Black IPA
5 Gallon All Grain
60min Boil
Mash Temp = 153

Ingredients
10.5 lbs. 2-row pale malt
1.5 lbs. Caramel malt (10 °L)
12 oz. Weyermann dehusked Carafa® II malt (450 °L)
10 oz. Briess special roast malt (50 °L)

Hops:
Warrior hops (60 mins) - 0.8 oz
Cascade hops (2 mins) - 0.25 oz
Warrior hops (2 mins) - 0.75 oz

Warrior hops (dry hop = 7 days) - 0.25 oz
Cascade hops (dry hop = 7 days) - 0.50 oz

Irish moss tablet (15 mins)
US-05 yeast

OG - 1.062
FG - 1.016

I love special roast in my black IPA's. Looks similar to one I've done with McKay75. Our 10 g batch has 3 oz Warrior at 60 mins, 4 oz Cascade and 2 oz Warrior at 2 mins. The hop combo is simple and tastes great. Keg went fast. I look forward to this!

Hey folks,

I really got interested in Black IPAs after a trip to St. John's and the Yellow Belly Restaurant and Brewery. They had one this summer as a seasonal beer and it was incredible. The waitress informed me that the hops used were Brewers Gold, which I'd never heard of. Anyways, long story short - I talked with Dave at Everwood a few times and this is the recipe he recommended. As for late Warrior, I know that usually that hop is used more upfront, but figured it would balance out the beer and give it some great flavoring. I still wanted this to be a solid IPA, with great aroma and bitterness, but also with a color that will make your brain immediately think 'stout' or 'porter'. Hope it turns out!

Oh, and Broob - on second thought, I should have named it 'The Nights Watch' or 'An Ode to Jon Snow'

Out-fucking-standing. Poured amazing. That's one of the thickest, longest-lasting heads I've ever seen (har har har). Thick lace the entire way down the glass. Lovely caramel/roast notes that seemed to perfectly compliment the hop aroma. I could drink this by the truck load.

Just making supper and poured this beauty. Carbonation is perfect, head is thick and long lasting. It coats the glass like an ice cream float. I was expecting less bitterness and hop flavour from the recipe but it's perfect. Great job. I love special roast in beers! Allan steps up to the plate and knocks it out of the park!!!

Black IPA is not my favorite style, or at least most of the ones I've had have not been to my liking, but I am very much enjoying this. Good balance, nice hop flavors. I could drink more of this quite happily. Thanks!

Great job on this beer. Very easy drinking. Great hop and malt balance. Could easily drink a few of these.

Awesome head retention and lacing. This Black IPA is just how I like them, lots of hops with a noticeable roast complement.

Not so happy with the latest BJCP guidelines that say a BIPA should be black in colour, but no roast.

Anywho, really enjoying it, thanks for sharing!

I enjoyed this beer with a couple of black bean burritos tonight. There is a slightly sweet berry taste especially towards the end that I really like, perhaps what Jeff called blackberry. I wonder where that flavour is coming from? Thanks for sharing!

Great job on the colour. Great head retention and carbonation. Picked up a little citrus and light roasty notes on the nose. A nice balance of the roast flavours with the hops. Wouldn't complain if it was a bit more hop forward but do enjoy the balance achieved in this brew.

Would happily drink again.

Please send more!

Yup, loved this as well. When I looked at the recipe I expected to see more late additions of cascade. I was surprised how much hop flavour shone through.

Imperial stout yesterday, black IPA today, and my robust porter tomorrow. All big dark beers with very differing flavours. Nice thing about this advent is being able to relate different flavours back to their recipes. Cheers!

Great beer!! Messes with my head. I expect a stout or porter heavy on the roast then I taste a balanced IPA. WTF. And for one final mind fuck, a bit of roast kicks in at the end to make me second guess for a second. Great style.
