Once upon a time I went to the Rockbottom and Nash had put out a dark mild beer hammered with west coast hopppy goodness called The Rookie. So here's my advent contribution inspired by the idea of a west coast dark-ish mild. But it ain't no Rookie.

The Wannabe ~ 6 gallons
OG 1.039
FG 1.010
abv 3.8%
IBU 28
SRM 17
------------------------------
Marris Otter - 6.5 lbs (77%)
Flaked Barely - 0.5 lbs (6%)
Victory - 0.5 lbs (6%)
Carastan 30 - 6oz (5%)
Carafa II - 5oz (4%)
CaraAroma - 2.5oz (2%)

0.4oz Columbus @ 45 mins - 21 IBU
1oz Falconers Flight @ 5mins - 7 IBU

S-04

NOTE: the 5 minute addition was supposed to be Simcoe, but the fridge was bare. I also would have added a 5 day Simcoe/Columbus dry hop, but had to skip out on this go

Dry hop would have been nice, but the beer is right up my alley. Can't wait. Mine is 4" ish and a brown.

Thanks Sandy. Small brown sounds real nice. Mine should be alright, but more muted than I originally intended. Safer this time around, I guess. Hope you like it.

Cheers.

Doesn't surprise me. However it being brown does.

Did some quality control testing on the extras. It's okay, but I still think the recipe works better with Simcoe. Next version will also forego the Carafa in favour of pale chocolate

Drinking this now. Carb is a bit low but I think milds are a a bit lower on the carb level anyway. Agreed some dry hopping would have been nice on this. No flaws that I can detect...not really a style I love but still enjoying it.

Very nice, clear looking brown. Carbonation is light and head is thin. Not getting a lot on the nose. A bit of hoppiness and some malt notes. Bitterness is bordering on being too much but that is hard trick with this style. Could use a bit more late/dry hop. Otherwise a pleasant beer to end my night. Cheers!

An amazingly clear beer and the carbonation is spot-on for the style as far as I'm concerned. I think I would have liked the bitterness level a little more if there had been more in the way of hop flavor/aroma. A very well-made beer that I thoroughly enjoyed; hopefully you get the recipe/ingredients to your liking and we get another chance to try it. Thanks!!

I think my bias hurt me on this one. Mild is one of my favourite styles and I make it a lot. I always feel like it should be an English hop(s). It was a great beer but my preference for the style is English hops. I may have to play around with American hops. Thanks.

I'm really late getting to the last few. Just having this now. I'm enjoying the malt and hop combination. The carbonation is great. Good job!

Thanks Keith. I have a couple left in the cellar and I find the flavours starting to fade a bit, so glad you liked it.
