I low temp smoked some 2-row for about tow hours for this indirectly with some cherrywood.

2-row - 71.1%
Smoked 2-row - 9.3%
Vienna - 5.6%
Munich 10L - 4.3%
Carastan - #.1%
Melanoidin - 3%
Belgian Candy Sugar -3.7%

Mash @ 149F
60 min boil

Magnum 60 mins (49.3 IBU, 2.5 oz in 40L)
Styrian Goldings - 15 mins (7.6 IBU, 2 oz in 40L)
Styrian Goldings - flameout (1.5 oz in 40L)

Belle Saison yeast, ferment at 26-28 C

Does this pair well with leftover turkey?

Nice spicy Belgian yeast flavors with a hint of smoke. The 10% is well hidden. Great job

This one really ticked all of the boxes for me. I didn't detect any noticeable smokiness, but I did get some great mustiness and cherry. Ridiculously smooth for something so high octane. Made making dinner difficult.

The hint of smoke in this is very nice. The aroma is really intriguing as well. Definitely doesn't taste as boozy as 10%. Would love to try this again with a different Saison strain. Still not super impressed with the dry Belle Saison yeast.

Goes against everything I know about Saisons. It got more interesting as it warmed. The yeast was somewhat restrained, but still clearly a saison strain; those more into the style might prefer something with a little more pop, but this suited my purposes quite nicely. The alcohol level is obviously off the charts for the style, and though I noticed it a bit, it certainly wasn't overpowering. Some nice flavors and an intriguing brew. Thanks!

Not what I was expecting but this is my favourite advent beer so far.

I normally hate Belgian style beers and generally find strong esters difficult to drink. I must say that this is a nice beer and I am really enjoying it. The sign that a beer is really well made is that it appeals to someone who normally doesn't like the style. The subtle smoke is awesome. Good job.

Was a little late getting to this one but I'm on a smoked malt kick and picked up on it right away in mine. This would be an excellent beer for a midwinter campfire on a snowy night. Little more esters present as the beer warmed. The smokiness made this beer and masked the booziness for me. Strong smoky brews remind me of winter. This The Saison

I'm well behind on the advent. Honestly have 18 onward remaining with a few holes. (They are dark malt bombs which my wife loves and waiting to share).
Anyways this one has been calling my name for a while. I'm a huge fan of Cherrywood smoke malt, saison's are hit or miss but this intrigued and intimidated me a bit.

The beer has a nice copper\amber color (kind of orange), slight haze, not clear (possible bad pour?), little head with a nice ring around the glass that has been there the duration.
Nice nose, I believe I pick up on the yeast and maybe a hint of the Belgian candy.
The flavor comes in big with the Belgian candy, finishes with the Belgian yeast character and a mild clean smokiness from the cherry wood.
Beer overall finishes clean with just the yeast character remaining.

Over all delicious beer. IMO one of the best beers you've brewed. Really nice and complex. Would like to drink this again. (Subtle hint haha)

Looks beautiful, it's got a persistent white head with a nice read colour. It is a bit hazy. I'm getting lots of nice bannana and cherry fruity esters along with some hints of rubber and other phenols that add a pleasant complexity. Lots of fruit character (are there actual cherries in this?) along with a alcoholic bitterness (or maybe the smoked malt) which balances out the sweetness which I think improves the beer. The malt character is present in the background and blends in well by complementing the fermentation character. Finishes medium dry with a cherry fruit character that last long into the finish. There is a bit of an astringent character that lingers into the finish as well. I find the smoke character of this beer different than other beers with smoked malts. I'm not sure if I would have picked up on it and maybe have attributed it to fermentation character had I not known there was smoked malt in here. Thanks for the fantastic beer, I'm having a hard time to wait for it to warm up.
