2015 Advent - December 24th - Kentucky Breakfast Stout Clone

IBU: 78
ABV: 9.1% (before adding bourbon)
Recipe for 19.5L final volume
18.5 lbs 2 Row (77%)
2 lbs Flaked Oats (8%)
1 lbs Roast Barley (4%)
1 lbs Chocolate Malt (4%)
0.75 lbs Carafa Sepcial II (3%)
0.75 lbs 120L Crystal (3%)
1.5 Oz Nugget (13.5% AA) @ 60min
1.6 Oz Willamette (4.8% AA) @ 25min
2.4 Oz Willamette (4.8% AA) @ 10min
90g Bittersweet chocolate @15min
53g Unsweetened cocoa nibs @ 15min
72g Ground Sumatran coffee @flameout
72g Ground Sumatran coffee cold brewed in 1.25 cups of water (grains strained before adding) @secondary
16g Toasted French oak chips soaked overnight in 1.25 cups Kentucky Bourbon all added to Secondary
Yeast - 2 pack of US-05
Mashed at 155F for an hour and boiled for 90min
2 weeks in primary
2 months in secondary on oak
This tasted like a boozy, roasty, hot mess when bottling but looks like the flavours have mellowed out with a bit more aging and carbonation. Hope you guys enjoy. There's a little bit of...sweetness maybe (I'm terrible with describing flavours) upfront I'm not a big fan of. If anyone can pinpoint that would be greatly appreciated.

Almost thought this was not carbonated but a light head formed after being poured into the glass. A lot going on in both the nose and the taste. Roasty chocolate, coffee and then that boozy hit. A complex sipper. Emphasis on being a sipper. Hooboy!

Agreed - very little head, but I like my stouts with low carb. Loving this one, great job

This was totally awesome! I would buy this, better still will make some!
Great job! Nice bitter chocolate flavour, smooth liquor finish! Tasted like more!
P.S. Would work at breakfast even though we had it near lunch!!!

Very impressed with this. Very roasty and the coffee flavor is perfect. Definitely boozy, but that's the style and I didn't find it distracting. Thanks a bunch, it was a perfect Boxing Day midday brew!

I had this Christmas eve and thought it was excellent. Really complex. Loved the coffee aroma and taste.

The coffee hits hard right away and then mellows out after a bit. I like it a lot but I think less coffee would be better but I don't know. Thanks.

I had this bad boy with supper tonight. It went great with some roasted pork I made with a Dijon mustard wine glaze. I'm not usually a fan of bourbon or any hard liquor in beer. Aged in barrels hell yes but you pulled it off with this one. This is what this exchange is all about. You made a big beer and took a hail Mary and killed it. This beer is so layered with flavours. The carbonation was low but it worked. You went all in with something different and it paid off. You gave home brewing the one fingered salute and that is what it's about Good job!

Had this one last night. I think that in general it is very difficult to make so many different additions work together and you did a great job. I thought the low carb worked well. Thanks!
