The wife and I decided that it's high time that I move two of my hobbies out of the house and into their own building. The humidity from home brewing and the sawdust from woodworking are interfering with the peaceful enjoyment of our home. The obvious solution is to build a garage/workshop/laboratory to house these relaxing activities.
I'm looking for some input from you fine folks on how to plan the brewing space. Rough starting point is that the space could be 12' x 25' with the brewing/sink/plumbing area at the back end. Also need to contemplate grain, hops, and yeast storage. Grain milling, yeast propagation, etc. Fermentation and lagering... what else? What other kind of space requirements should I be thinking about?

Sounds like a dream. I would look at being able to put a car in the building for winter maintenance.

Ventilation
Adequate Electricity (if you are electric)
Milling - Go motorized. It makes things so much easier. I love mine, probably one of my best investments.
Cooling: Water source.
Large sink for cleaning
Storage
Grain - Shelf /w buckets would suffice. I'd get something air tight due to Mice.
Yeast & Hops - Freezer works
Fermentation - All Fridge on temp control.
