I mean rock it and force carb and let the final few points finish in the keg. I normally rack on day 8.

TBH I think its done...I'll check it tonight.

the starting gravity was only 1.043...and I pitched lots of yeast

Bigger issue might be crashing the yeast. Carb, chill, gelatin.

It's an wheat...don't want it to clear...that's why I chose that style...to save me time lol...low abv (4.5%) wheat beers can be ready fast...

Pj's mosaic wheat
10g batch
6 lbs Pale Malt (2 Row)
6 lbs Wheat Malt
2 lbs Vienna Malt
2 lbs Wheat, Flaked
1 lbs Honey Malt

Mash at147.9 F 90 min
0.50 oz Mosaic at 15.0 min
0.50 oz Mosaic at 10.0 min
1.00 oz Mosaic at 5.0 min
2.00 oz Mosaic 0.0 min

3 packs of us05 rehydrated

Fermented at 18c

Hooked up the gas at 26psi...keg is about 66f...shook for 10min. I'll leave it on the gas til Friday then he can get them cold for sat night

Did you hear the gas stop? But yea if it is still @ room temp, leave the gas up to 26psi.

Yea I can relate. What do you have 1 week for it to finish carbonating before the party? If so you're laughing.

Yea...he will put it in the fridge Friday and tap it Saturday evening
