Hi folks,
I know a lot of people on here have built electric brew pot controllers. I've looking at buying these components (found here: https://www.amazon.ca/Inkbird-Universal ... oller&th=1) but I'm not sure the temperature probe will work. Thoughts and suggestions?

That one comes with a K type thermocouple temperature sensor which you might find harder to integrate into your setup. I havent used any inkbird's myself but have seen a number of people using them on other builds on various brewing forums.
I use a Sestos D1S-VR-220 with a 1/2 NPT. RTD (pt100) temperature sensor for my RIMS control panel and love it. I got most of my components from ebay.

I use DS18B20 temp sensors. You can find them on amazon and ebay already hooked up to 1m of wire and waterproofed for about a buck or two each if you buy a bunch at a time. They're good if you're into DIY at all, since you'll need to use an arduino or raspberry pi to use them. They're perfect if you're planning on using CraftBeerPi or Elsinore.
