If I were to buy one of these what would it look like in terms of long term storage. I'm assuming it would be fine to vacuum pack and refrigerate?

I store mine in the freezer. It has been there a year and viability is fine.

I do what Nick does. Vacuum bag and store in the freezer.

I wouldn't have thought that you can freeze dry yeast. Learn something new every day

You can freeze it and it'll last well beyond to 1-2 years advertised. I'll check when I get back home but I believe that the life of an opened package of yeast (brick or otherwise) from Fermentis is 12 months if kept in the fridge.
