I think I still have some CM120 left, no special b at NG. Basically I was looking back through the threads and saw many variations on the recipe, and was wondering what the majority is going with for consistencymr x wrote:I'll bring up a few lbs of pale chocolate with me tomorrow. You might still get special B at noble grape, but we were using caramunich 120 from an NCM order. I'll see what I have left, but check with the locals too.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Re: Barrel Filling - Round 2
This was my recipe, which is going in this barrel. I sub'd CM120 for the Special B and I sub'd Fuggles for the Kent Goldings
Maris Otter - 77.43%
Roasted Barley - 8.58%
Caramel Munich 120 - 5.60%
Caramel/Crystal Malt - 75L - 2.80%
Chocolate Malt - 2.80%
Pale Chocolate Malt - 2.80%
Magnum [13.60 %] (60 min) - 64.5 IBU
Fuggles [4.00 %] (10 min) - 7.2 IBU
Fuggles [4.00 %] (5 min) - 4.0 IBU
SafAle American Ale (DCL Yeast #US-05)
Things to note: Set your brewhouse efficiency to 55-60%. My normal efficiency is 70-75% and I used 55% for this brew. I hit all of my numbers exactly. You'll have to use a starter for your yeast, or if using a US-05 dry, hit it with at least 23g. Mash at a little lower then suggested, I mashed at 150F, you could probably go a bit lower. Also, pray to the fermenting gods...lol!
Enjoy

Is kiln coffee a suitable sub for pale chocolate?

If there's a few of us going to NG for the MO we should look at a full bag...or two if they have them on hand. I'm doubtful that the NCM order will be soon enough to wait on. I'm thinking more time the better considering some of the attenuation issues in the first bunch

I was thinking we could put together a group brew day? Any one interested? I could host on August 18 and have the capability of brewing 120 liters in a 7 hours session.

Before you go running off to NG for MO, I'd consider using 2-row and a bit of vienna or munich in this beer.
And I'd say pale choc and kiln coffee are close enough.

Re: Barrel Filling - Round 2
My beer is good to go right now! I started at 1.100 and I'm at 1.029 as of today.
I'm going to rack it into a carboy tonight and just let her finish over the next month. It tastes excellent, smooth and warm. I'm interested to see how the second runnings turn out as well.

Re: Barrel Filling - Round 2
It can be, but be prepared to scale back on your efficiency even further than for a big beer, as I've found GP has a lower yield than regular MO.

Re: Barrel Filling - Round 2
What is the general consensus on subbing MO with a 2row/vienna and/or munich combination? I'd like to sub because that's what I have in stock but those that have MO or have already brewed may not like that idea?

In a beer with this much roasted/oak/scotch flavour, I think the key is to try and get the specialty malts right, and not worry about the base malt.

Yes exactly - if you can tell the difference between a RIS brewed with Canadian 2-row vs. MO (and identical specialty grains of course), either you're lying or have super human taste buds!mr x wrote:In a beer with this much roasted/oak/scotch flavour, I think the key is to try and get the specialty malts right, and not worry about the base malt.

Re: Barrel Filling - Round 2
OK, I just went through this whole thread a second time - maybe I missed it. When are we looking at for a fill date (approx) for Round 2?
Us SAAZ folks were trying to work out a group brew, so maybe this project makes the most sense, since Graham and I are both scheduled to be in on it.
IMO, a Black IPA/CDA like Tim's Lucky Loonie could work well for Round 3.
