
For 8 (7 liters or so)
2 liters water
0.2 liters white wine
2 carrots
2 tablespoons tomato paste
2 celery stalks
2 garlic cloves
1 leek
3 teaspoons red curry paste (indian curry paste is also tasty!)
4 teaspoons fish sauce
4 beef or veggie boulions
Black pepper
0.4 liters cream
2 cans coconut milk
3-4 lbs lobster, scallops, halibut or haddock
1 red bell pepper
Parsley or Cilantro for garnish
Chop carrots, celery, garlic and leek
Heat oil in a pot, add curry and tomato paste and fry for 1 minute. Add chopped veggies and fry for few minutes.
Add water and white wine
Add fish sauce and boulions
Bring up to boil and simmer for 15 minutes
Sieve the stock and remove the veggies
Add coconut milk and black pepper to the stock
Boil for 5 minutes
Add cream, seafood, chopped bell pepper, and parsley/cilantro
Serve and enjoy!
