Here's a link to a site that has a great salsa recipe for canning. It is ingredient-balanced for pH to provide safe canning but you can add any amount of dry spice. There is a chart provided to make very large batches if you'd like.
I've made it and it's awesome, I increased the heat quite a bit to my taste. I ended up with 25 jars, they disappeared quickly once friends tasted it.
Can't wait til there's $.15 per pound tomatoes at Gateway again.

I made a similar recipe a few weeks back, but just made a small amount with the tomatoes I had from my small garden. It's disappearing quickly at our house as well.
