Elderflower Mead

Going to try an experimental (1 gal) batch of Elderflower Mead. Hope it turns out.

10+ flower heads
1 orange juiced
1 lemon juiced and zested
2 L boiling water
steeped overnight and then strained with cheesecloth

Add above to 1.5 kg honey
add water to get SG ~ 1.08
5 g Fermaid K
Yeast TBA
Aerate and ferment at 65-70 F

Rack, Clear, stabilize, backsweeten, bottle ~ 1 year

Have you done a six month sample of this one? I have been thinking about pulling one of these together.

This is my first time with elderflowers. I made a grape mead and strawberry mead two years ago. They are coming along nicely. I made a blueberry mead 3 years ago and forgot about it until this summer...it has turned out to be outstanding! I wasn't crazy about it early on.

I've also got a 2 year-old apple mead that turned out wrong...tastes like lavender soap. I'll probably dump it soon.

Racked this one the other day. Very nice elderflower nose and flavour. I think it's gonna be quite good.
