At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Congrats. Great job
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Congrats!

As someone who knows very little (really nothing) about mead this spikes my interest. Are there good mead's available through ANBL??

It's really difficult to find commercial mead in Canada. I've only had one, and it was pretty aweful stuff. A common one in the US is Rabbit'sfoot. I've never tried it, but the reviews seem to be mixed. Nothing listed on the ALNB website for mead.

I know that dunhams run does produce some mead out in Kingston, are you familiar with their mead?

The only mead I've tried is the not great NS commercial mead, and my own. Just don't see it anywhere. I do look for it when travelling, but no luck so far. I think it's more common in the UK than in North America, although I keep hearing it's become more popular.

Try making a 1 gallon batch and see how you like it. A sweet mead tastes pretty good without a lot of aging. Dryer meads seem to need 2-3 years before they really start to taste good, in my experience. I made an off-dry blueberry melomel several years ago that was ok tasting, but not great. Went back to this spring, and it was awesome!

I posted a no-age mead recipe in the Wine and Mead section. It's a little sweet, but very tasty. My wife loved it.
