I checked the bottle that I grabbed for Shane, and it has Nash written on it :p

Well I gave Pinhey a bottle of Hoppily Ever After to try. He surprised me by assessing my beer. Really appreciate it Jeff! Thanks for the go ahead to share this!
Already worked out the flaws (on paper) on this test batch and figure the next one will be perfect. Now time to order some more hops!

I told Keith I’m sending this back to him to send to a competition. He PMd back and said if I sent it he’d drink it, it was for me, so here goes …
No offensive maltyness (no XS f’in crystal). Really good! Beautiful aroma. Shared it with Kathleen, I know when it’s a good beer, she jumps up and down. That usually only happens with my beers LOL. You scored.

8.3% Crystal in that mofo. If I had more I'd send more but that was the last bottle to be opened.
Next batch I'm going to dial the Crystal back to 1-2% and adjust the base grains a bit. Really it won't be the same beer after I'm done, but thems the breaks. Glad you both enjoyed the beer.

I'm not sold on the beer, it was tasty and I'm happy with my first DIPA but not what I wanted. Droping some crystal, and adjusting the hops.

plus I need to build a IPA around the hops I can easily get. Can't justify paying the absurd amount to get Belma here.

I haven't had this one, but if you think you can make it better, I say go for it. Like you said, you'll still have the original recipe. Also, you just bought a ton of not belma hops, so why not see how they work out?

That's moving on. If you are moving on, get off the pot and do it, don't modify. If you made a good beer don't piss around with it IMHO, make a new beer. The new beer will be likely just as good.

"Hoppily Ever After" should stay the same way it is, so I can drink it in 10 years time and enjoy it. You gave it to me and I liked it, It's mine now. I'm getting pissed with these discussions about changing it.

Ok, I'm not really sure what we're discussing. If he changes the hops and lowers the crystal malt, then it will be a different beer, although not necessarily by that much. Is there really a difference between calling it a tweaked version and just calling it a whole new beer?

Honestly, I don't name my beers, so every one of my beers of the same style is sort of a tweak of the last one. I make a beer, drink it for a while, and make notes about what I think would make it better, or maybe just different so I can learn. Or I have to change it for ingredient availability.
