Picked up a grain order that was supposed to be 5lbs pale 2-row and 0.25lbs of Crystal 15, but ended up being 5lbs of 2-row and 2.5lbs of Crystal 15. Obviously I'm going to have to "dilute" that crystal in some fashion, so what are some suggestions for crystal-heavy beers?
I should point out that the grains have already been crushed and mixed, so it's not like I can just take only the crystal I need and put the rest aside for now.
What can I do with all of this crystal?

I'm thinking doppelbock, but even then... 5lbs Munich, 5lbs 2-row, 2.5lbs crystal 15 amounts to 20% crystal 15. Seems a bit high? Maybe not. I've got the Classic Styles 'Bock' book, whose recipes for bocks only amount to about 1lb out of 13-ish. 'Designing Great Beers' does suggest it could go as high as 30%.
I'm also happy to add a LOT more base that I would need and split the resulting total grain into 2 or more batches.

If you are brewing a 5 gallon batch, over all it's a light grain build and C15 won't be anything over the top.
Why not look at brewing a Session IPA and go about 30 IBU on the bittering hop addition.

The original sizing was 2.5 gallons. I'm thinking I'll try doubling the pale and see where that puts me as far as OG on a 5 gal batch.

Current grain build on a 5 gal puts it around 3.8% 6 SRM. Be easy to do. Or add 3lbs of base malt and go with a 5% IPA.

I'm curious to know what this will taste like. Seems like it would be pretty thin.

You'd need to mash fairly high. I brewed one not to long ago. Mashed at 156.
