I've used this yeast once, and found the final beer had a LOT of sulfur on the nose, but tasted ok. I did completely fuck up the temp (didn't have the sensor against the carboy, or even in the fridge...), so I likely stressed things out a bit early on. I'll try it again soon. Mine also finished wicked low.

I finally bottled my Saison on Monday night, it finished around 1.000 at about 3 weeks (OG was around 1.046). I used some Tangled Garden lavender honey for bottling sugars.
Here's the recipie I used for a 1 Gallon test batch...
SAISON GRAIN BILL
1.3 Oz Belgian Pilsner
0.3 Oz Honey Malt
0.1 Oz Aromatic Malt
0.02 Oz Munich Malt
0.02 Oz Cara-pils
HOPS (left over from several other previous batches)
0.08 Oz East Kent
0.12 Oz Brambling Cross
0.05 Oz Fuggle …fo `da funk!
YEAST
Belgian Ale Yeast - Bele Saison
ADDITIONAL
0.2 Oz Belgian Candi Sugar

Bump! Anyone ever try the Danstar Belle Saison in a double IPA or IPA? I'm doing a double batch soon and want to do one half with us05 and the other with Danstar or a liquid Belgian I have. I'm leaning towards the liquid but have Danstar BS in the fridge and wanted to know how the esters would go in an IIPA.

I'll text you a few dates soon. I think we will just scrap the Danstar BS and I'll step up a wlp575 or a wlp550.

That yeast turned out good for me the few times I've used it, though not in an IPA

Thanks Trevor. I've tasted it in a Saison and liked it. I'm still on the fence about using it in an IPA.

I'm running a Belgian IPA with this tomorrow and was thinking about throwing a 1/2 pack of t-58 in as well. I'll let you guys know what I do and how it turns out. I'm hoping to make it to a Truro meeting in the future.

I was thinking about getting some saison yeast as its actually supposed to be quite warm during fermentation (some of the ones available at everwood suggest fermentation temps up to 90f!?!?) so since I am having a hell of a time getting my hands on a fridge to mod for fermentation I may just brew saisons with a head wrap and inkbird.
