Hey folks,

I'm planning to hack a Brewhouse "Prairie Wheat Ale" kit to make Wit and I have a yeast question. Basically wondering which of the following yeasts I should use:

1. 3463 Forbidden Fruit Belgian White/Wit Yeast
2. WLP400 Belgian Wit Ale Yeast
3. US-05

I'm leaning towards 1 or 3 because I don't think 2 is available around here. Your help is appreciated!

not that I have much experience with a Wit, but go with the wyeast, the us-05 will finish clean, and not really impart much character

On a related note, I'm planning to hack a stout kit tonight by adding vanilla beans. I've already racked to secondary and plan to open the beans up and soak in about 2 oz of vodka for 24hrs then just toss it in. Any pitfalls I should be aware of here?

I'd check with Dave, MW&B or NG for yeast availability. For a Wit flavor I'd use the right yeast, i.e.. 1 or 2.

Thanks! NG has yeast 1 according to their website so I'm probably gonna go with that.

Check with Dave he just received a fresh order in not too long ago. I've got expired dry yeast before from NG, and unsure their turn over. Probably best to build a starter IMO.
