New Member - Charlottetown
Hi all,
I've been using this site as a resource, and figured it was time to introduce myself. I'm relatively new to brewing, with 5 batches under my belt (all-grain). I started with 1 gallon batches, and have now started 5+ gallon batches.
I've been using either spring water, or campden treated Charlottetown water so far, but am going to start playing with water chemistry this weekend.

Welcome aboard!
There are a few other PEI Aleanders on the forum here, and you just missed out on a meeting Friday, but there will be more soon!

Sounds good.
I wouldn't have had any brews to take on Friday anyway. They all seem to have disappeared ...
...
There's a batch conditioning, and I'm bottling this weekend though.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.
