Hi Everyone,
My first brett finished beer is done, I think. I pitched some brett B and L onto an oatmeal stout on May 21, and I think it's done now. It's FG is sitting at around 1.011, which I think is a little high for a brett beer, but the beer only attenuated down to around 1.018 or so before pitching the brett. It's been there since late October, and hasn't moved since. I just planned on bottling it like normal, does that seem fine? I'd figure after not moving for a month and a half it's probably attenuated as much as it's going to get. Should I just add the normal amount of priming sugar, and maybe leave it longer to carbonate than usual, like a month or so?
Thanks,
Andrew

I'd give it some more time. Or if you don't want to wait at least bottle in thick bottles. Also, it might take a bit longer than a month to carbonate.

I definitely second heavy bottles as a precaution. Maybe also move the fermentor somewhere a little bit warmer (~20C) for a week and see if you get any additional action before bottling, depending on how warm it is where it's been.
Enjoying: Black Sheep (Dark Farmhouse with Brett)
Fermenting: NZ Pale Ale, Orval Clone, Berliner Weisse, Brett APA

It's been in the basement, so it was probably high 60s through the summer, maybe lower 60s now. Where do you guys get heavier bottles? Maybe I should just wait another few months. It'll give me a chance to put an oak spiral or cubes in there, since I meant to do that a few months ago and forgot.

Anything with thicker glass will do, like the 500 mL picaroons bottles but the belgian bottles with the curved bottom are the best.
