Saturday - Made my partial mash Backside IPA: Light DME, 2 row, munich, cara-pils, caramel 60L, melanoiden, 100% citra hopped, US-05 yeast.

Sunday - Bottled my Gaetz Brook Pale Ale. Took a flavour sample, which was great! Will be a very light, easy drinking beer. And my clarity on this batch is by far my best yet!

Brewed a Saison with Motueka on Tuesday and a long term sour on Thursday. Planning a Gose for Monday
On tap: Hopped Mead, ESB, Schwazbier
Coming up: Altbier
Fermenting: Maibock
Planned: NEIPA, NZ Pils, Oyster Stout

Just brewed a Scotch Ale for some friends this weekend. First time trying something of this sort, so we'll see how it turns out.

Mad Air IPA - which is my attempt to clone High Heel Brewing's: Too Hop'd To Handle DIPA. Will be brewing this over the long weekend, can't wait bring on the nice weather starting today!

Next on my list for myself will be another clone attempt this time for Founders Brewing: All Day Session IPA (session). That won't be for a few weeks unless I buy some new bottles.

Did up a kettle soured Gose between yesterday/today. Planning on an inaugural brew on fire821's new set up Sunday. 40l of witbier

22 gallon SMASH, 55 lbs of 2 row and 16 oz of leaf hops left over from last year, 3.5 oz of Mangrove Jack's Workhorse sitting comfortably at 18 C.

Mosaic hopped APA, with 2 row, munich, oats, crystal 15 and honey malt. 'cause one of my kegs kicked yesterday.

So change of plans, I have extra hops and new hops that I need to use. What are your guys thoughts on Dutches Mirror Pond Clone but instead of using Cascade, I'd use a bit of Chinook with a bunch of Galaxy. Here are the ingredients:
Pale 2-row, Munich, Cara-Pils, Caramel 60L
Chinook (bittering and a 15min add), Galaxy @ 10, 5, 1 and Dry
US-05 for the yeast.

Thoughts on the combination of Chinook and Galaxy? or the recipe in general?

No issue with your recipe Stew but if you're looking to replicate Mirror Pond, you'll miss the Cascade and Ringwood yeast combo. In my opinion, both big factors in that great beer.

Yeah last time I made it, I changed the yeast to US-05 as well, so I know it was not an exact clone, but it turned out delicious none the less, so I just planned on using my current hops, help save money and use up what I have.

I've never actually done the Mirror Pond Clone properly because I've always used us-05 as my yeast, so I'll have to try it sometime with cascade and ringwood to get the actual flavour. Always heard great things about that beer and it's one of the top rated, so I'll have to brew it properly in the future.
