2017 Advent - December 14: Marzen

Well this is my first lager. Had good temperature control the entire time, but think I still got some yeast off-flavours (diactyl).

OG: 1.050 SG
FG: 1.014
ABV: 4.7%
Estimated Color: 11.0 SRM
Estimated IBU: 33.9 IBUs
Boil Time: 90 Minutes
Mashed 152F for 60 minutes with full volume(BIAB)

Ingredients:
------------
Grain
5 lbs Pilsner
4 lbs Munich Malt
3 lbs Vienna Malt
1 lbs Caramunich II

Hops
1.25 oz Hallertauer [6.40 %] - Boil 60.0 min
0.75 oz Hallertauer [6.40 %] - Boil 10.0 min

Yeast
2.0 pkg Saflager Lager (DCL/Fermentis #W-34/70)

For fermentation I pretty much used this as my guide:

7 days at 12C.
Ramped up to 18C in 2 steps over 2 days. Stayed there for 1 week.
Back down to 3C for 2 weeks.
Kegged and kept at 3C for 3 weeks before bottling the night before the exchange.

How did you mash this? What temperature did you ferment at?

I was looking forward to this one - I love märzen, oktoberfest, and festbier.

Definitely some diacetyl as it warmed up, but it wasn't out of control.

Colour was great, tasted great, although maybe just a touch too bitter.

I thoroughly enjoyed this and would happily drink more. Thanks!

I liked this beer. I've never had a Marzen and I don't know what it's supposed to be.


To me it tastes like a bock with more hop flavor and bitterness. I noticed a minor off flavor on the finish. I almost wanted to call it oxidized but nope not sure.

Carbonation is perfect for the beer, I love the color and the nice deep Malt flavor. The hops do not at all interfere with this.

Drank this one last night and it was my first of its kind. I liked the look of the beer and it was carbed nice. I liked how malty it was.

There was a little something in the flavor that was a different but it might have just been the flavour combo of the grains. Not bad, just new to me. Curious to know about your fermentation for this beer. Thanks

I updated my original post with mash and fermentation details. Overall I don't mind the beer, but I tend to focus on the flaw (which I think is diacetyl) during the finish.

Not super familiar with the style, but I quite enjoyed this. Some diacetyl was in there, but it wasn't a fault in this beer. Really nice toasty malt flavours through out. Thanks for sharing

I like this, it's a good normal beer. It's a nice change of pace from the crazy nonsense some of us have brewed for this.

I thought this was a very nice marzen. The wife picked up some possible acetaldehyde but she's very sensitive to that.

This was very well done. The recipe was right on with respect to Marzen, although your recipe has it slightly higher alcohol for the style, but that's not noticed at all. Nice bread, toasty malt aromas and flavours, low but great supporting hop bitterness. I do get diacetyl, particularly when it warms up. A little longer on the yeast before you cool it down would clean that up, although it's not at a high level. This is a great example of classic style beer.

Never had a marzen before. Found it malty and a bit sweet in the finish. Glad to have tried it.
