Ale temp Pilsner yeast?

Post by MikeMorrison » Tue Jul 10, 2018 12:54 pm

Anyone have success brewing a decent Pilsner with Ale fermentation temperatures? I never brew lagers since I don't have a temperature controlled fermentation spot but I'm in love with Stilly Pils so I'd love to try a dry hopped Pilsner of my own. The ambient temperature in my fermentation area this time of year is around 18-20 celcius.
Fermenting: Sticke Altbier, Amarillo Saison, DDH Amarillo IPA with Verdant Yeast
On Tap: Good Morning Spider Hop Harvest IPA

Kolsch yeast (for a psuedo-lager) or use W34/70 which can tolerate some warmer temps into the mid-60's. I've never pushed W34/70 into these ranges but Brulosophy (I feel all I do is quote these guys!) has done some testing with that yeast and had some good results. Even at your ambient temp you'd still want something to regulate the fermentation temp swings (ie swamp cooler). Also you probably could avoid a diacetyl rest since your fermentation would be warmer.

I've used WLP029 in the low 60s and had great results in my Kolsch, very clean and crisp!

I assume you keg and could do the cold crash/lagering there.

Stillwell Brewing's unfiltered pilsner. Super good.
