Re: Beer #8 Stout
Lots of hops going on in this one. Tasty stuff Sandy
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Nice one Sandy. Cleanly brewed. Lots of hop flavour in there for a stout and it's ok with me. The flavour and finish remind me of a well-pulled espresso shot. Very rich. Thanks for sharing.

Really enjoyable. Lots of nice roast. There is a bit of an acrid metallic taste going on but that is pretty minor. I'm getting a decent amount of fruity hoppiness. The carbonation is a bit on the low side, but its perfect for the style. It is really hitting the spot tonight!

Re: Beer #8 Stout
Really solid stout. Nice smooth mouthfeel, plenty of roast character, and a prominent bitterness. I thought it tasted hoppy, but didn't expect to see quite that much hops in this style. Totally works though. And it certainly drinks like a hoppier stout rather than a Black IPA.

Re: Beer #8 Stout
Now some have chimed in I will confess to a 30 min mach and boil.
The roast and hops may cover the flaws from the short boil.

I have experimented with it off and on. No tragic beer but I don't have a judges pallet.

Nice tasty stout. The roast shines strong amid the hop dosing. Seemed a tad thin but maybe that's just my general preference. Is very easy drinking. Thanks Sandy.

Really surprised to see how well that amount and variety of hops worked with the level of roast. This beer is a testament to how unreliable our eyes can be when it comes to flavors.
I think a little more body would make the beer even more enjoyable for me but it doesn’t detract from the flavors melding together well. This is what I look for in a well made beer, flavors that deliver as one congruent package.

Soooo much cocoa, which I loved. The top popped with vigour, so I expected it to be super carbonated, but I was pleasantly surprised at the actual level. Definitely lots of roast notes in there. The chocolate absolutely dominated for me and I didn't notice the hops all that much.
Great beer! Thanks!

Re: Beer #8 Stout
I haven’t had the beer yet, I’m still a few days behind. I’ve moved to a 30 minute boil as well for most beers since spring at least, except for a few where I’ve added too much water and needed to boil it down some. I haven’t had any issues.

Remember. Greg was known as “Quick Mash Nash” in Wisconsin. 15-20 mins was all he felt necessary. Longer meant astringency.CartoonCod wrote:Maybe I should start trying a 30 min mash and boil.

Judge sheet for this one.
That espresso pull and acrid metallic finish several of you noted was all that kept this from a great score. Still high 30’s. Fix that and it’s plus 40.

Enjoyed it. Thanks for sharing. Nothing major to add I found it a nice change from a standard stout.

Haven't been in the exchange in a few years. What a gift to have Brewnoser evaluate them and with such detail. That's an early Christmas gift in my opinion. Cheers.

I also use Thomas Fawcett Roasted Barley and chocolate and it makes a huge difference. Not roasted as much and smoother.

Re: Beer #8 Stout
Ya that would be my suggestion as well or cold steep the dark grains for 24 hours...similar to cold brew coffee.
On tap: APA, Dubbel, Dark Mild
Fermenting: Brett Saison 2022, Schwarzbier, APA, Sour Brown,
Coming up: American Wheat (Fruited), Vienna Lager, Dortmunder
Bottled: Brett Saison 2020, Brett Saison 2021, Baltic Porter

Re: Beer #8 Stout
All good ideas. Maybe try boiiing half the roasted grain bill and steeping or late addition for the other half?
A yeast that is less attenuative might also leave some balancing malt.

Re: Beer #8 Stout
I've got a similar metallic character in lighter beers from certain hops before.
