15% Rye
15% Spelt
55% Pilsner malt

10g Columbus @60 for approx 20 IBU


WLP 670 American Farmhouse

Brewed 22 July
O.G. 1.053

Added 600g dried hibiscus flowers on 25 October

Bottled on 31 October
F.G. 1.003
ABV~6.5%
On tap: Hopped Mead, ESB, Schwazbier
Coming up: Altbier
Fermenting: Maibock
Planned: NEIPA, NZ Pils, Oyster Stout

Absolutely gorgeous color. A bit of acidity is present on the nose along with floral hibiscus. Definitely some yeast character as well. Even with the bit of tartness it’s very smooth. Quite enjoyed this, thanks!

I tried this one blind without knowing the style/name and it was very neat. Was thinking that maybe the red/fruity flavour was raspberry and that the Brett had went to town on it. The Brett funk is very well controlled, I tend to be turned off when they get too funky. Great job, thanks for sharing!

Wow, thats pretty good. I didn’t really have an expectation on this, because I didn’t know what hibiscus tastes like. It’s tart, and not as light bodied as I would have expected for something finishing at 1.003. Go Kevin!

This was super good. Seemed like a lovely light sour at first, so I was surprised at the recipe. The hibiscus was lovely as it warmed. I wouldn't say no to another bottle of this.
