2018 Advent - December 20 - Chubby Unicorn's "Hoppy Christmas' (Brown IPA)
Since I put the recipe on the exchange thread rather than the recipe board I figured I would re-post over here. This is a scaled up version of last years entry in the black box challenge.
Chubby Unicorn's Hoppy Christmas (Brown IPA)
10 gal batch split into 2 - 5's, one for the keg and one bottle conditioned for the exchange.
5.25kg - 2-row
4.45kg - Vienna
0.65kg - Crystal 80
0.50kg - Wheat malt
0.30kg - Munich
0.20kg - Crystal 40
0.20kg - Chocolate
25g - Magnum @ 40 min (14.8ibu)
30g - Masaic @ 20 min (11.4ibu)
65g -Cascade @ 15 min (9.8ibu)
65g - Mosaic @ 15 min (8.9ibu)
65g - Amarillo Gold @ 15 min (8.9ibu)
2 - Whirlfolc\irishmoss tablets @ 15 min
110g - Cascade @ flameout\steep 10 min
15g US-05 pitched per 5gal bucket (30g total)
125g - Cascasde - 5 day Dry hop
35g - Amarillo Gold - 5 day Dry hop
110g - Moasic - 5 day Dry hop
7 day Primary
14 day secondary - 6 days of sitting, 5 days dry hop, 3 day cold crash
Bottled 5 gal with 132g priming sugar dissolved in 500ml boiled water
Est OG - 1.064, Act OG - 1.054 (I think 1.064 was a little optimistic and i need to tweak my efficiencies)
Est FG - 10.15, Act FG - 1.004 (that or I need a new hydrometer)
Est ABV - 6.6%, Act ABV - 6.5
ESt IBU - 59.9, SRM 15.3
Brewed on Oct 28, bottled on Nov 18th. I was a little later than planned getting this batch brewed, so I hope it is carb'd well enough buy Dec 20. I wouldn't put it in the fridge before Dec 18th.
I tasted the sample from my thief last night while getting another FG. It was something akin to getting punched in the face with a pineapple...yum!! With a nice bitterness to finish. The roasted malt flavor isn't coming thru like the last time I made this one, but I'm hoping the carbonation brings it out a bit.
I have a couple extra bottles so I can check the carbonation a few days before...will let ya know. Hope everyone enjoys!

Re: 2018 Advent - December 20 - Chubby Unicorn's "Hoppy Christmas' (Brown IPA)
I don't calendar so well so I drank this accidentally on the 19th
Pours with a lovely off-white head that lasts and lasts and lasts; perfectly carbed. Quite fruity nose with some malt character coming through. Palate is a little bit roasty and slightly malty sweet. Maybe a little bit of graham cracker there? (interesting that there's no biscuit malt present in the recipe) Nice level of bitterness, and I think the roast contributes a little to that and then the hops come through for me mostly on the finish with a fruity kick.
I'd have guessed some of the fruity flavors were from yeast given how well integrated they were, but not with US-05. A really well-done beer that I had to fight not to drink faster. I really enjoyed this one; it is legitimately one of the better Brown IPAs I've had. Thanks!

Very tasty. Its in balance and has a nice bitterness. Really enjoyed how you weren't afraid of the hops yet they aren't overpowering. I love Amarillo and Mosaic so maybe I'm partial
One of my favs so far. Thanks!

Beautiful brown ale - nice colour along with a pleasant amount of hops (the cascade really shined through). This reminded me a lot of the Angry Leprechaun from last year which I really enjoyed. Thanks for sharing

Great hops presence with a nice malt backbone to balance it out. Tasty stuff

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Nice hop hit in this beer. The cascade really stood out for me as well. Tried letting it warm up but it did not last long enough. Thanks!

I love Brown IPA’s and this was so good. I can’t add a ton but one of my favourites of the Calendar so far! Fantastic job.

Very nice beer, thanks for this. Social drinking tonight so I don't have time for detailed comments, but it was appreciated!

I'm behind on my tastings, catching up by skipping a few I'll get to over the holidays. This has great hop aromas - fruity and floral. Full hop resin flavour with a robust malt flavour to back it up. A hearty, hoppy brew. Thanks for sharing.

Overall, I really liked this beer. My only complaint would be it didn't have quite enough of a brown ale character. Other than that, it was excellent. I thoroughly enjoyed it. Thanks!

Really enjoyed this one. Nice malt base, great hop presence in both aroma and taste. Shared with friends while brewing a double batch of IPA. Thanks for the share!

Glad you enjoyed! Looks like it cleared up nicely aging. Make me wish I still had some kicking around! Have to get on that I guess...GCR wrote:Really enjoyed this one.
