Sweet. I love Voss. It's a beast. Over pitch, under pitch and all kinds of different flavors and tartness at different temps. I need beer on tap in a bad way so will be happy to be kegging in 5-6 days haha.

Agreed! I used it for 5-6 generations as a house strain for all my hoppy beers, perfect for speed brewing for sure. This batch is getting a little bit of a different treatment.

Got a London III starter going today. Will let it go a day or two, then split it in 2, and then start 1 of them again for a Milkshake IPA. And then keep the other half for something else. This starter is the 4th generation. So next beer will be using 5th generation. Don't know about going further...

Brewing up a neipa (Paak Tha Caa) tomorrow...
I'm planning to brew a Jamaican wheat beer after that (G'wan Wit It). Wheat malt...pilsen....cassava starch....will add a blend of tropical fruits after fermentation (thinking pinà, mango and passionfruit)...I'll use enuf hops to balance and American wheat yeast.

In the middle of a double brew day - first was IPA with mosaic / galaxy and citra + London fog yeast.
Second - American wheat - this usually keeps the non-craft beer drinkers happy.
