Brewing? What's brewing? It's been too long. Really should try to get one done within a couple of weeks, will start running dry soon.

Brewed up a Gose last night that I am testing out the new Lallemand Philly Sour yeast on! 12 hours after pitching it was up and running! Super excited to see how this one turns out!

That sounds delicious! :mmm: My recipe is pretty basic (pils, wheat and a little mittelfruh) and without much other flavor in there for the salt and coriander to play with I prefer go on the light side for both to keep it subtle. I like to use 11g of sea salt and 14g of coriander (smashed but not pulverized to dust) in a 21L batch and that seems to work well for my tastes. I did my first version with 14g salt and found it a little too forward for my taste so I dialed it back a little and was very happy with the next iteration. I usually kettle sour it so I am super curious to see how this one stacks up!

Brewed and split a base, unhopped (DME) Berliner weisse. Both halves are chugging away on some voss kveik. Will introduce WLP655 (Belgian sour mix 1) to one half and plan to inoculate the other half with a skyr culture and then later to rack onto rhubarb (and perhaps strawberries or blueberries).
