Easter Ribs

Ribs on the left dusted with Acadian Maple Peppered Maple Sugar. Ribs on the right - my BBQ rub.
After a few hours on the WSM:

On the left - glazed with Acadian Maple BBQ Sauce. On the right - Smokin Stampede Chipotle & Beer
Served with maple peppered slaw and maple glazed smashed potato

So, I was at chalmers place for Easter dinner. He presented the following ham:

I believe it was smoked for two hours using hickory, and contained an awesome dijon mustard/maple syrup glaze.
I vaguely recall some other food being present at the table, but could tell you exactly how many slices of ham I had.

I have been doing some baking and I finally got around to posting these.
First try at baguettes (brought these to the SAAZ meeting). These had a good 36hour cold ferment which really brought out some nice flavors. Braided rye, Hogie you saw this one in progress when you dropped by to pick up your grain. Next is Ciabatta. I like making Ciabatta, probably because I like to use the word poolish and its damn good bread.
Here is is proofing: and baked, the one on the left got a little dark.
