Here's what I'm thinking for a thursday 10 gallon batch.
2-Row Pale (Canadian Malt) 96%
Crystal 15L ~ 3%
Flaked Barley ~ 1%
Cascade @ 60 min
Ginger peach tea 6 oz steep 10 min
OG ~ 1.045
IBU ~ 15
Mash @ 152
Not sure what kind of yeast to go with.
American Ale
American Ale II
1099 Whitbread
3463 Forbidden Fruit
Thoughts?

Re: Ginger Peach Ale
I'm a bigger fan of using real fruits and spices, but that's up to you. I think the 1272 or 3463 would be fine.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

I have made this recipe numerous times however it was a wheat beer and it turned out bomb.
This time around I want a simple ale with no wheat. Hopefully will turn out just as good.
