Re: Hawaiian Pale Ale
I'm gonna try the lemon and see what happens. Hopefully it's not too much. Maybe a bit of saaz would compliment it as well.
I guess will just be an experiment.

Gonna transfer my pineapple blonde to the secondary and dry hop. Also plan on adding some pureed pineapple I put in the blender.
What's the best practise for sterilizing this pineapple purée?

Re: Hawaiian Pale Ale
I took a gravity sample this evening and also had a small taste as well. I've gotta say this is tasting DAMN good. Those late addition cascade hops were shining through and there was definitely a hint of pineapple there. I dry hopped some more Cascade and will keg in a week. I think this might be much better than expected.

Re: Hawaiian Pale Ale
I kegged it last night. I took an FG reading of 1.010, so it turned out to be a 6% ABV brew. Having had another small taste of it before kegging, it has lots of hop character and aroma with a small hint of pineapple. I think this turned out VERY nice but I'll reserve final judgement until it's carbed and cold.jacinthebox wrote:How did it turn out?

Re: Hawaiian Pale Ale
Here's my brief review of the Spearhead Hawaiian Pale Ale clone that I made. As you can see from the picture, the obvious difference is in colour (mine is on the right). I was really surprised about this. Spearhead lists an SRM of 12 on their website. The recipe that I made in Beersmith indicates an SRM of 11.6. Odd to say the least. :S So with colour out of the way, what does it taste like? The taste profile isn't exact, but it's pretty darn close. The subtle pineapple taste in mine is more natural like compared to Spearheads......not really sure how else to describe it. The Spearheads was a little more hoppier in aroma and taste than mine as well. I dry hopped mine with 1.2oz of Cascade, but upped it to 2oz during my second batch. Hopefully that will get me a little closer to the original.
Overall, I am very happy with how it turned out and and consider it to be a VERY drinkable pale ale. I'll see how the second batch differs from the first and make necessary adjustments from there. Would like to get the SRM nailed down as well.

Re: Hawaiian Pale Ale
I made a second batch of this with a couple of tweaks. Even though, I thoroughly enjoyed version 1.0 as well as friends and family, this version is MUCH better IMO. I made two changes to the original recipe that I made. I swapped out Crystal 20 for Crystal 10 and also upped my dry hop of Cascade from 1.2oz to 2oz. VERY happy with upping the dry hopping amount.

Re: Hawaiian Pale Ale
Brewed this up tonight, had to make few adjustments, but should be in the ballpark of the original.
Here is what I used:
3300 g Pale Malt (2 Row) US (2.0 SRM) Grain 1 62.1 %
650 g Caramel/Crystal Malt - 40L (40.0 SRM) Grain 2 12.4 %
650 g Munich II (10 SRM) Grain 3 12.2 %
340 g Carafoam (2.0 SRM) Grain 4 6.6 %
340 g Munich Malt (9.0 SRM) Grain 5 6.6 %
30 g Northern Brewer [8.50 %] - Boil 60.0 min Hop 6 22.9 IBUs
36 g Cascade [5.50 %] - Boil 30.0 min Hop 7 10.3 IBUs
30 g Cascade [5.50 %] - Boil 10.0 min Hop 8 0.0 IBUs
30 g Northern Brewer [8.50 %] - Boil 10.0 min Hop 9 0.0 IBUs
30 g Cascade [5.50 %] - Boil 0.0 min Hop 10 0.0 IBUs
1 large pineapple for the last 15 minutes of the boil
Planning to dry hop after 7 days with 60 g of Cascade.
I didn't have California Ale yeast and my homebrew shop was out of US-05, so I had to use nottingham, going to ferment at fairly cool temperatures (12-15°C), hopefully that will result in pretty clean fermentation.

Hey Shane and Jon - I'm looking at a pineapple pale myself, wondering about the amount and timing of the pineapple. Shane, I see you used one full pineapple, 15 mins in the brew. Would you do that again? Did you secondary with pineapple at all?

Re: Hawaiian Pale Ale
Yep, I used an entire large pineapple and added it with 15 mins left in the boil and would definitely do it again. I probably brewed this at least a half dozen times and really enjoy how it turns out. I never added any pineapple to the secondary as I found enough pineapple comes through from the boil. I like it nice and subtle and not too overpowering. Just my own personal preference. Two Wheeler wrote:Hey Shane and Jon - I'm looking at a pineapple pale myself, wondering about the amount and timing of the pineapple. I did the same thing, and would probably do that again. Made it twice, once with WLP 001, and once with Nottingham, WLP001 came out better.canuck wrote:Yep, I used an entire large pineapple and added it with 15 mins left in the boil and would definitely do it again. Re: Hawaiian Pale Ale
Shane,
You ever consider about releasing this as a regular release since it has received such positive feedback? I'm going to jump on this band wagon and try a pineapple in an upcoming release. Not sure it will be a hoppy beer, may lower the quantity and put it in with a Belma WFM. Who knows, one thing I love about brewing my own beer.
