Danstar Windsor Yeast
Anyone have any experience with this yeast?
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

After the price increase on the -04 and -05, I thought I'd try it. I split a 10gal batch of Ordinary Bitter and did half with -05 and half with Windsor. It's still in the carboys but should be ready soon. I'll try to bring both to the next meeting.

I checked these tonight and found that the FG of the Windsor yeast was 1.017 and the US-05 was 1.011. This batch was brewed on Jun 7, so fermentation 'should' be complete. Seems the attenuation of the Windsor yeast is low. (the starting SG was 1.055)maltster wrote:After the price increase on the -04 and -05, I thought I'd try it. At this point I can't really say if I prefer the taste of one over the other.

I just the keg I just finished was fermented with windsor and I found it to be really fruity when fermented at room temp. So much so that I don't think I'll use it again.
