There is some delicious meat free food out there. I’m not against meat, but if it is a constant thing, it can get a bit mundane, especially just after Christmas. I just discovered this large bowl of food in the fridge that can be scoffed whenever. Kathleen made it with chick peas, quinoa and veggies with lemon juice, lot of garlic, olive oil, parsley, celery, peppers etc. quinoa is a complete protein.

Quinoa burgers are pretty tasty little things. Good as a burger or they work well as a big hashbrown if you throw on a little extra salt.

I posted a pic of these spinach and ricotta stuffed shells awhile ago, so figured I'd add the recipe too.

INGREDIENTS
Approx. half of a 340g package of large pasta shells (or make your own)
1 can (680ml) of garlic tomato sauce (or make your own)
10 oz frozen spinach (or just add what “looks like enough”), defrosted. Can substitute cooked fresh spinach.
Recipe suggests bread crumbs, used crushed soda crackers and nacho chips instead. No measured value, just what “looks like enough”.
Olive oil
1 container (475g) of ricotta cheese
Cheddar cheese (parmesan would be better)

INSTRUCTIONS
1. Boil pasta, or make from scratch. Drain, let cool slightly.
2. While boiling pasta, also cook (steam) spinach. Drain and squish out any extra liquid.
3. Combine ricotta, spinach, bread crumbs or soda crackers, and a little bit of olive oil.
4. Add sauce to the bottom of an oven-safe dish. (Make sauce at this step or ahead of time if from scratch).
5. Spoon the spinach and ricotta mix into the shells and place full shells into the sauce in the pan.
6. Add cheese. I’ve used cheddar so far, but parm would be better.
7. Cover with tinfoil.
8. Bake. Not sure what temp, maybe 350’ for 20 mins? Remove tinfoil near the end.
9. Eat! Om nom nom.

Next time you have a meal that doesn’t have meat (or meat and 2 veg), and is really good, would you post a pic.

Don’t worry, steak won’t become extinct. It goes too well with what Nash calls HP Sauce (HP Hunters stout).

IIRC Food Recipes is a new section, started by Jimmy only a month or two ago. Now only has four recipes. Would be good to get it going a bit.

Would your shells stand one more post Keely :)

My downstairs tennent is a veggie and like I told her, if man was meant to be a veggie, he wouldn't have made meat taste so good.

But having said that, there are some tasty veggie meals that go well with meat :spilly:

So what you are saying Tony, is if man was meant to be a meat eater, then why are there so many delicious non meat foods :)

The implication is that everyone's personal preferences are merely subjective opinions that cannot be "right" or "wrong", so they should never be argued about as if they were.

Variety.. Man shouldn't live on meat alone.. he should have something for side dishes :D

We went vegetarian at New Year’s…well, me not totally as I still eat fish. Now I’m a bit worried about the canned wild pacific salmon that I eat a lot of, because of the radioactivity. I had a sail/row boat when I was a teenager and used to go out longlining and feathering and fill the boat up with fish. Also wild fish is a very healthy food. That’s my story and I’m sticking to it. Not so keen on battery farmed chickens and factory meat farming, or even commercial fish farming for that matter …health wise, more than anything.

Kathleen made casadias tonight. Really delicious. Gluten free, inside; black beans, brown basmati rice, sautéed peppers onions and garlic, cilantro, mozza and cheddar. Tomatillo sauce in the jar. Topped with fresh homemade salsa; tomatoes, onions, garlic, squeezed lemon juice, jalapenos, salt, pepper, tonnes of cilantro, or "hammered with cilantro" as Nash would say.

Yeah I wouldn't be concerned about radioactive stuff making its way into fish- the ocean is really really (really really unbelievably) big, and the leaks from Fukushima have been very small. Unless your salmon was caught in the immediate vicinity of the plant, of course.
