I put on a batch of all-Brett IPA last night using Brussels Brett from Escarpment as the primary/sole yeast - I've had great results with the Brett D strain, but it wasn't available last time I was in town.
Has anyone had any experience using Brussels Brett as a single yeast? I read on Everwood's site (and on Escarpment's as well) that it can be used as a primary if you make a starter (which I did). OG was 1.054.
