Lunch on Wolfville main street.
AVA not so good today. It's usually what I drink at Paddys, but the Blueberry Ale was nice. The chimney Swift Stout is interesting.

Paddy's had a "feature beer" on tonight called "Solo Citra". It was interesting, not bad, and think I got the hang of what Citra tastes like now. Fathom must have some Citra in it maybe as It reminded me very slightly of Fathom, no where near the magnificence, but nice all the same.

Good to hear the beers are perhaps improving again... I think Gavin was there about a year back and ordered two or three beers and sent each one back due to horrible, horrible infection. Paddys was one of my favourite spots when I was a student at Acadia so it would be great if they get things back up to snuff! May have to give it a go next time I'm in town visiting my sister.

Paddy's Pub in Wolfville is hosting a Brewery Tour this Saturday, May 10th, at 5:30pm. Visitors will be able to learn the art and science behind brewing, by learning about the ingredients that go into your pint, the brewing process, and how to taste the beer. Tickets are $10 (available at the bar), and include a 16oz beer. We are not sure if this will be a regular event, so be sure not to miss it!

I went to Paddys first ever brewery tour. They plan to make it a regular event. I go to Paddys quite a bit. It’s a “Wolfville institution” (hate that expression, but I guess it’s true). It was nice to see them open up and be available for questions. The assistant brewer did the tour. He did a great job I thought. His name was Mitch, he knows you Ed and Kirsten.
Started with a chat and a free beer, then he got some more tasters of all the beers. I was struggling a bit with my pint of Solo Citra, and found out why I was struggling as it had C30 in it (personal thing). The samples seemed to come freely so I moved to cream ale samples which I found a bit better. At the end of the tour the guide produced an aged Belgian of some sort and dished it out (saison yeast couple of months old). My face finally lit up, and I wanted another glass or two. That was great, I thought. He said it was the last of it and we were honoured that he was giving it to us. The whole thing was thoroughly hospitable, and very worth the $10 ticket price.
They use all liquid English ale yeasts (2 varieties), and I saw an empty carton of White Labs English Ale yeast. The assistant brewer didn’t think they modified the Wolfville water at all, the only thing was some gypsum in the stout. There was half a gallon of lactic acid on the shelf but it was covered in dust and didn’t look like it had been used in a while. The beer is about 2 weeks from grain to glass, and they often run out in the summer, and only have domestic beer at those times.
Tiny little antiquated brewery, but seems to work for them. We moved from the brewery to the basement where the brite tanks are and growler filling station.
Here’s some pictures of a country brew pub brewery. It’s old and has been going for a long time. Not as flashy as some of the new city places but it’s functional and doing its job. This brewery also supplies kegs of beer to Paddys in Kentville.

There's a hotel beside it. I think it's a Slumber Inn. You can see both from the highway as you drive by Windsor.FitzGerald said he has had conversations with the hotel and there are plans to combine facilities, making for an ideal place to host weddings and other large events.

Everyone I speak to, myself included, are affectionately calling it Castle Paddy's. It makes me chuckle. But looks aside, it'll be a great addition to the local area, and I hope it really takes off.

I think it’s great to put in some original personality. It makes it a talking point. Takes courage to do something silly/zany with a big venture, and already it is making people smile. I wonder if he is plotting a franchise of Paddy’s Irish Pub Castles. That could fly. Life is for having fun with stuff.
The new location will have a “castle motif” as a way of making it more recognizable, he said.
“We didn’t want a low-profile building because it would be difficult to see from the road.”
FitzGerald said the building will show off some of his ancestry.
“I’m Irish, and in Ireland there’s lots of castles. So I guess it was sort of my own vision.”

Whatever happened to the Paddy's they were fundraising to open in New Minas? I guess presumably it just didn't happen, but I'm curious why.

I remember Paddys tried to put a location where the Tradesmen pub was (now where Credit Union is), but they seemed to have stopped pursuing that once the Wolfville location was gutted by fire. I don't know any more details and that could have been coincidental given the timing.
