At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

I know getting more taps in the city is (and should be) your priority, but feel free to look farther afield. Amherst is in dire need of something other than AB/Inbev & Molson-Coors.

Thanks for the introduction and your perspective. I look froward to hearing how you progress. I'm glad to hear you guys are so successful out of the gate and hope you continue on that trajectory. I'm also glad to hear you are trying to pin down your system. As you said, Belgium's are complicated beasts and although I wasn't crazy about the samples I got, I will happily try them again now that I know you guys are getting to know your system. Hopefully that wasn't too much a downer, I really am excited about your ambition to bring new flavors to the east coast beer scene!

Small city! I worked for Peter's father Herman on the dairy for a number of summers. Sadly it has been sold, but I stay in touch with Herman. Amazing worker, and amazing philosophy about agriculture and stewardship. Are you also an engineer?

Welcome to the discussion Josh! I think it's fair to say that a large contingent on this forum wants only the best for brewing in this city. I, for one, am glad to see another brewery in that neighbourhood, and believe that more breweries will lead to a bigger market for craft beer. You're also trying something that the other breweries around here aren't, which is great for pushing boundaries.

With that all said, I've already tweeted with (presumably) Peter to talk about my thoughts on the beer. There was a marked improvement from the first batch I had (Gus' in one of the first production runs) to the latest batch I had, nearly three weeks ago. I hear you're desperate for bottles, I have two, I'll try to go up today and grab a new bottle to test. If the beer keeps getting better at the rate it has, I'm willing to keep trying it here and there. I know what you're shooting for, and honestly it just wasn't there the last time I had a bottle. Hopefully with the major kinks out of the system you're closer to that point. I won't re-iterate my thoughts on the beer because I think they've been covered by others.

Gavin picked up a bottle for us to try tonight. Apparently the ceramic bottles were cracking so they've switched to glass now.

Methinks it's a process issue. Hopefully they can figure it out and get back to ceramic - they're supposed to last more cycles than glass.

Personally, I hated the ceramic. Unless they have an absolutely stellar bottle washing system, nothing beats a very quick visual inspection of the bottle. They have no control over what state people return bottles in, and if you get a realllll nasty one that just won't come clean, how do you flag that?

On another note, tried both the dark and the farmhouse (2nd time) last night. The good news is the farmhouse is much better. It's still not quite where I would want it, but improvement is of course a positive thing. The dark on the other hand... Under pitch or too hot a ferment for sure and there were signs of the start of an infection (unless it was just the yeast strain, but I doubt it). There were elements of it I liked (the malt character was good). Overall though... Let's just say if I put on my BJCP hat, I would have scored it quite low. I think these guys would be wise to pilot batch new beers and get someone qualified people to taste them if they can't pick these flaws out themselves.

In to Gus's for a burger and beer. Beer (65m) was good. Burger was good. Fries were kinda crappy and overpriced (Shelley and Lauren do not agree). The menu written on the mirror is really annoying.

As for Gus's, not a bad place, but the VLT scene is too depressing for me to be around for any length of time. Take out only in the future.

I finally made time for a new brew of strong dark - new yeast nutient really moving things along and helping with attenuation for our beers that aren't 100% malt (strong dark has 80 srm Belgian candy syrup). Upped the galena hops to balance the malt load better. Always looking for feedback!

I'd like to try the 65m at 5 or 4.5%. It was good, but one was enough at that strength with food. I think at a lower alcohol level I'd like more than one, and maybe with just a bit less yeast character at a lower alcohol level.
